Sweet Potato Chocolate Brownies (DF) (GF) (130 cals)

INGREDIENTS- Makes: 9 squares

(130 cals per square if you make 9 squares)

  • 300g sweet potato, cooked & mashed

  • 2 eggs

  • 40g cocoa powder

  • 60g pure maple syrup

  • 30g almond meal

  • 1 tsp vanilla extract

  • ½ tsp baking powder

  • Pinch of salt

DIRECTIONS

  1. Preheat oven to 180°C and line a small baking dish.

  2. Mix all ingredients in a bowl or blender until smooth.

  3. Pour into baking dish and smooth the top.

  4. Bake for 20–25 minutes, until set but still fudgy.

  5. Allow to cool before slicing into squares.
