Turkey Mince Veg Stir-Fry (DF) (GF) (390 cals)
INGREDIENTS- SERVES 1
150g lean turkey mince
120g zucchini, sliced
80g red capsicum, sliced
40g carrot, thinly sliced
8g olive oil
1 tbsp gluten-free tamari
Salt & pepper (optional)
DIRECTIONS
Heat a pan or wok over medium heat with 8g olive oil.
Add turkey mince and cook for 4–5 minutes, breaking it up until cooked through.
Add vegetables and stir-fry for 3–4 minutes until just tender.
Stir through gluten-free tamari and cook for another 1–2 minutes.
Season to taste and serve.
