Turkey Mince Veg Stir-Fry (DF) (GF) (390 cals)

INGREDIENTS- SERVES 1

  • 150g lean turkey mince

  • 120g zucchini, sliced

  • 80g red capsicum, sliced

  • 40g carrot, thinly sliced

  • 8g olive oil

  • 1 tbsp gluten-free tamari

  • Salt & pepper (optional)

DIRECTIONS

  1. Heat a pan or wok over medium heat with 8g olive oil.

  2. Add turkey mince and cook for 4–5 minutes, breaking it up until cooked through.

  3. Add vegetables and stir-fry for 3–4 minutes until just tender.

  4. Stir through gluten-free tamari and cook for another 1–2 minutes.

  5. Season to taste and serve.
