Loaded sweet potato (DF) (GF) (426 cals)

This Loaded Sweet Potato is a perfect example of how a meal can be filling, nourishing, and still support fat loss.
At 426 calories, and gluten-free and dairy-free, it’s packed with fibre, flavour, and balance — ideal for busy days when you want something easy but satisfying.

INGREDIENTS- SERVES 1

  • Sweet potato 150g

  • Extra lean beef mince 150g

  • Tomato paste 20g

  • Mutti passata 80g 

  • DF sour cream 25ml

  • Avocado 50g

  • Red onion 10g

DIRECTIONS

  1. Heat a pan over the stove and put in tomato paste and onion. Saute the paste, then add the beef mince and passata. Allow to simmer for 10 minutes. Add herbs, salt and pepper as you desire. 

  2. Wash and dry your sweet potato. Poke holes with a fork all around the potato and put on a microwave safe dish.

  3. Microwave the potato for 5-10 minutes, checking every 3-4 minutes. Remove from the microwave once it's soft.

  4. Cut the potato directly in half, pour over the beef mixture, add avocado and light sour cream. ing.
