Chicken Parm with Homemade Potato Chips (460 Cals)

INGREDIENTS- SERVES 1

  • Chicken breast: 150g

  • White potato: 150g

  • Coles Plain Breadcrumbs: 20g

  • Egg: 1

  • Coles Tomato Passata: 80g

  • Mozzarella (Coles brand): 30g

  • Olive oil: 10ml

  • Garlic powder: ½ tsp

  • Dried oregano or Italian herbs: ½ tsp

DIRECTIONS

  1. Prep the chicken: Flatten chicken breast slightly. Season with salt, pepper, and garlic powder.

  2. Bread the chicken: Beat the egg. Dip chicken in egg, then coat with Coles Plain Breadcrumbs.

  3. Cook the chips: Slice potato into thin chips. Toss with 5ml olive oil, salt, and pepper. Bake at 200°C for 20–25 mins, flipping halfway, until golden and crispy.

  4. Cook the chicken: Heat 5ml olive oil in a pan, sear chicken 2–3 mins per side until golden.

  5. Assemble Chicken Parm: Place chicken in a small oven-safe dish. Spread tomato passata on top, sprinkle mozzarella, and add oregano/herbs. Bake 12–15 mins until chicken is fully cooked and cheese is melted.

  6. Serve chicken with homemade potato chips on the side.
