Teriyaki Salmon & Noodles (420 Cals)

INGREDIENTS- SERVES 1

  • Salmon fillet: 150g

  • Egg noodles (Coles brand or similar, dry): 50g

  • Broccoli: 50g

  • Carrot: 50g

  • Teriyaki sauce: 20ml

  • Olive oil: 5ml

  • Sesame seeds: 2g (optional)

  • Spring onion: 1 stalk, sliced

DIRECTIONS

  1. Cook egg noodles according to packet instructions. Drain and set aside.

  2. Heat olive oil in a pan, cook salmon skin-side down 3–4 mins per side until cooked. Remove and set aside.

  3. In the same pan, stir-fry broccoli and carrot 3–4 mins until tender-crisp.

  4. Add cooked noodles and teriyaki sauce, toss to coat.

  5. Plate noodles and veggies, top with salmon, sprinkle with sesame seeds and spring onion. Serve warm.
