Mediterranean Tomato Chicken with Vegetables (DF)(GF) (405 cals)

INGREDIENTS- SERVES 1

  • 140g raw chicken breast

  • 150g canned crushed tomatoes

  • 120g zucchini, sliced

  • 80g red capsicum, sliced

  • 40g red onion, sliced

  • 8g olive oil

  • 1 tsp dried oregano or Italian herbs

  • Salt & pepper to taste

DIRECTIONS

  1. Heat 4g olive oil in a pan over medium heat.

  2. Season chicken with salt, pepper and herbs, then cook for 5–6 minutes per side until golden. Remove and set aside.

  3. Add remaining 4g olive oil to the pan. Add onion, capsicum and zucchini and cook for 3–4 minutes until softened.

  4. Stir in crushed tomatoes and simmer for 5 minutes.

  5. Return chicken to the pan and simmer for a further 5–7 minutes, until cooked through and coated in the sauce.
